In this class you will learn everything you need to know to make delicious gluten-free dishes with whole grains like amaranth, buckwheat, corn, millet, oats, quinoa and tef.  The meal will include Spring Quinoa Strawberry Tabbouli, Asian Sesame Millet Pilaf, and Toasted Garbanzo Polenta (amazing garbanzo French fries). Permaculture Design Certificate Course

(Various locations, mostly in Northern Arizona)

12-day course offered though the Master of Arts in Sustainable Communities Program at Northern Arizona University. Learn how permaculture design can meet human needs by turning human gardens and communities into fully functioning ecosystems. Receive hands-on experience on how to apply the principles of ecological design in your own home, neighborhood, and city. Co-taught with ecological landscaper Josh Robinson. Guest Speakers: Brad Lancaster and Andrew Millison. This course involves field trips, travel, site visits, hiking, and overnight camping. My annual solar cooking workshop. Learn how to:

  • Construct a variety of solar cooker designs

  • Build a fireless cooker out of materials you already have at home

  • Cook any food in solar and fireless cookers

  • Use a solar cooker to pasteurize water and can foods

  • Use a solar cooker at night to make ice!

  • Make a solar food dryer

  • A solar cooked meal will be prepared and served at this workshop
